

Ingredients
2 tsp light Olive Oil
1/2 fresh Pineapple (peeled and cut in chunks)
1 punnet fresh Strawberries (hulled and halved)
2 Kiwi fruit (peeled and sliced)
2 Oranges or 6 Mandarins (peeled and segmented)
2 Apples or Pears (peeled, cored and sliced)
1 Lemon (zested)
4 whole Star Anise
1 Vanilla Bean (split in half)
1/2 cup Cranberry juice
Method
Heat a wok.
Add the olive oil and stir-fry fruit in batches to lightly brown.
Remove to one side.
Add lemon zest, star anise, the scraped out seeds from the vanilla bean and the cranberry juice and bring to the boil to infuse flavours.
Return all fruit to the wok and toss well over a high heat until coated in fragrant cranberry juice.
Serve immediately in bowls while steaming hot.
